A Healthy Coleslaw

Are you looking for the perfect salad to go with your BBQ this weekend?  You have found it.  This coleslaw is tangy and alive with goodness.  

Hidden inside this old Aussie favourite is tumeric which is an anti-inflammatory and yogurt for maintaining gut health.  Your family and guests won't event know....

 

Ingredients FOR THE SALAD

  • 2 peeled, grated carrots
  • 1/2 small red cabbage shredded
  • 1/2 small green cabbage shredded
  • 2 fennel bulbs shredded
  • 1 cup of shredded kale
  • 3 shallots sliced thin
  • Handful chopped parsley
  • Handful chopped dill

 

 

Ingredients for the Dressing

 

  • 1 cup of sheep yogurt or plain greek yogurt
  • juice of 1/2 lemon
  • 1/4 cup of good quality olive oil
  • 3 tablespoons of apple cider vinegar
  • 1 tsp of pure turmeric powder
  • 1 tsp of garlic powder
  • 1 tsp of onion powder
  • 2 tsp of mustard
  • 2 tsp of raw honey
