Have you been hibernating this winter and resisting doing any exercise?  Perhaps you've been digging into comfort food that may not be all that healthy.  Instead of giving into the cravings for sugars and carbs, give your body the fuel that it needs....and deserves with this delicious, healthy and satisfying meal.

Ingredients for the Salad

1 bunch of rocket leaves
1 large carrot peeled and grated
2 large yellow ( or red ) peeled and grated beetroots
2 cups of shredded purple cabbage
2 fennel bulbs shaved with a mandolin
1 red capsicum shaved with a mandolin
1 shallot finely sliced on a diagonal
1 avocado sliced
handful of roughly chopped parsley

 

Ingredients for the Dressing

Good glug of olive oil
1/4 cup of apple cider vinegar
1 tsp of mustard powder
1/4 tsp of cayenne pepper
1 tsp of turmeric root powder
1 tsp of dried red chillies or crushed red peppers
2 cloves of garlic minced

 

Method

Place all salad ingredients into a large salad bowl
Place all dressing ingredients into a small glass jar and shake to combine
Pour over salad and toss to combine. YUM.
